Mediterranean Cod
Ingredients:
- 4 Italian tomatoes, diced
- 2 small zucchini, diced
- 1 chopped clove of garlic
- 2 tbsp. olive oil
- ¼ cup Kalamata olives, sliced
- 1 ½ lb cod fillet OR a package of Greenland halibut
- Juice and zest of half a lemon
- Freshly ground salt and pepper
How to proceed:
- Préchauffer le four à 425 °F.
- In a bowl, combine tomatoes, zucchini, garlic, oil and olives. Place in the bottom of a rectangular baking pan.
- Add fish, sprinkle with lemon juice and garnish with zest. Season with salt and pepper to taste.
- Bake for 15 minutes or until fish is cooked and vegetables are still crisp.
- Ajoutez du sel et du poivre au goût. Ajouter du punch avec de la Sriracha au goût.
