Mini pâtés with two salmon
Ingredients:
- 4 medium potatoes, peeled and finely diced
- ¼ cup of butter
- Salt and pepper
- ¼ cup of 35% cream
- 250 g de filet de saumon sans la peau, coupé en petits cubes
- 1 small yellow onion, chopped
- 200 g de saumon fumé à chaud à l'érable émietté
- 500 g de pâte à tarte maison ou du commerce
- 1 egg, beaten
How to proceed:
- Préchauffer le four à 375 F.
- In a saucepan of salted water, cook potatoes for 20 minutes or until tender. Drain.
- Using a pestle, puree with 2 tbsp. butter.
- Salt and pepper to taste. Set aside.
- Meanwhile, in a skillet, heat the remaining butter. Add the fresh salmon and onions and cook for 5 minutes, stirring regularly.
- Stir in cream and smoked salmon and simmer gently for 2 minutes.
- Stir salmon mixture into potatoes and set aside.
- On a floured work surface, roll out the dough to a thickness of about 2 mm. Cut the dough into a circle 10 cm in diameter.
- Déposer les cercles de pâte dans des moules à muffins huilés. Garnir de mélange aux deux saumons.
- Roughly close the dough over the mixture.
- Brush the dough with beaten egg and bake in the oven for 15 minutes or until golden brown.
- Serve with a homemade ketchup or a béchamel.
