How to proceed:

  1. Préchauffer le four à 375 F.
  2. In a bowl, combine the brown sugar, celery salt, onion powder, mustard powder and ground pepper.
  3. Rub the chickens with the spice mixture and place the rest in the cavity of each chicken.
  4. Place the Cornish chickens on a roasting pan, place the prosciutto slices on top of the chickens, crossing them.
  5. Bake for 60 minutes or until chicken is no longer pink in the centre. If the prosciutto starts to overcook, cover with foil.
  6. Serve with a simple mustard sauce.

Simple mustard sauce

Ingredients:

  • 1 tasse de crème à cuisson 15 %
  • 2 tbsp Dijon mustard
  • 1 tbsp. fresh basil
  • Salt and ground pepper to taste

How to proceed:

  1. Place all the ingredients - except the basil - in a small pot, bring to the boil, reduce the heat to minimum and simmer for 3 minutes.
  2. Ajouter le basilic et servir.
