Prosciutto Crusted Cornish Chicken
Ingredients:
- 4 Cornish chickens
- 1/4 cup brown sugar
- 1 c. à thé de sel de céleri
- 1 c. à soupe de poudre d'oignon
- 1 c. à soupe de poudre de moutarde
- 1 c. à thé de poivre du moulin
- 360 g organic sliced prosciutto (about 6 packets)
How to proceed:
- Préchauffer le four à 375 F.
- In a bowl, combine the brown sugar, celery salt, onion powder, mustard powder and ground pepper.
- Rub the chickens with the spice mixture and place the rest in the cavity of each chicken.
- Place the Cornish chickens on a roasting pan, place the prosciutto slices on top of the chickens, crossing them.
- Bake for 60 minutes or until chicken is no longer pink in the centre. If the prosciutto starts to overcook, cover with foil.
- Serve with a simple mustard sauce.
Simple mustard sauce
Ingredients:
- 1 tasse de crème à cuisson 15 %
- 2 tbsp Dijon mustard
- 1 tbsp. fresh basil
- Salt and ground pepper to taste
How to proceed:
- Place all the ingredients - except the basil - in a small pot, bring to the boil, reduce the heat to minimum and simmer for 3 minutes.
- Ajouter le basilic et servir.
