Tourtière (meat pie)
Et si on cuisinait un repas de Noël traditionnel cette année ? Imaginez un repas convivial avec tous les plats et accompagnements au centre de la table. On s’assoit, on discute, on mange… quel bonheur d’enfin se retrouver !
Ingredients:
- 4 medium-sized potatoes, peeled and cubed
- 2 tbsp. butter
- 1 trio of minced meats (beef, pork and veal)
- 1 small yellow onion, finely chopped
- 1 stalk of celery, finely chopped
- 2 cloves of garlic, chopped
- 1 cup of organic chicken stock - Viandes biologiques de Charlevoix
- 1 tbsp. Dijon mustard
- 1 c. à thé d’épices à tourtière (ou plus au goût)
- Freshly ground salt and pepper
- 6 pie shells (deep-dish format)
- 1 egg, beaten
How to proceed:
- Préchauffer le four à 375 F.
- In a pot, bring water to a boil and cook potatoes for 20 minutes or until tender. Mash with a potato masher and add salt and pepper to taste. Set aside.
- In a skillet, heat the butter over medium-high heat and cook the trio of meats, onion, celery and garlic for 5 minutes.
- Ajouter le bouillon, la moutarde de Dijon et les épices à tourtière. Saler et poivrer au goût. Mijoter à feu moyen-vif pendant 5 minutes ou jusqu’à ce que le liquide soit presque entièrement absorbé.
- Déposer les pommes de terre dans le fond de deux abaisses de pâte. Ajouter la garniture de viandes.
- Brush the edges of the dough with the beaten egg and add a layer. Seal well with your fingers or a fork. With a knife, make small incisions in the centre of the tourtières to allow for ventilation.
- Brush pies with beaten egg and place in oven for 45 minutes or until golden brown.
These pies can be frozen: don't hesitate to double the recipe to have a supply in the freezer!
